<description>My wife were in that region last summer. Yes Carcassonne is definitely worth a visit! It has a very interesting history and the tours are very well presented. If you are interested in other historic places, a town with a medieval quarter tucked away from the modern area is Pezenas. It is very atmospheric with cobbled streets that wind around and also go up and down. You should find nice restaurants there as well.

Another interesting place for quiet nightlife (nice restaurants, ambience, character)is Coulioure (spelling might be slightly wrong) situated near the border with Spain.

A 'must' to visit is the Millau Bridge over the Rivern Tarn, built as suspension bridge, designed by an Englishman (Lord Norman Foster) and which is the tallest bridge of its type in the world.

Near to the bridge (maybe 8 miles or so)is the Roquefort cheese factory ... N.B.Rocquefort cheese is made from ewe's milk. The history and method of innoculating the milk to become cheese is absolutely fascinating. Wear warm clothing for that visit as you will be going underground into caves where the chesses are matured!

I hope the above suggestions help.
